How to choose
When I would buy a mandoline
If you often make vegetable carpaccio, gratins or julienne, repeatable thickness may justify one. For slicing a single vegetable occasionally, a knife may be enough. Speed should not take priority over control and correctly fitting the food holder.
Which option fits best
OXO V-Blade offers defined thickness positions: we would choose it for repeating a setting without adjusting by eye. de Buyer SWING PLUS makes sense for anyone who will use several cuts and prefers a carriage and pusher. Börner V5 Plus uses inserts; check that the package includes the protective attachments you need. We do not name a safety winner because we have not physically tested the three.
Check the whole set, not just the blade
Support, food holding, storage locking and the pieces needed for each cut all matter. An attachment pictured beside the product may be sold separately. Check the package reference: Plus and Standard do not necessarily describe the same contents.
Before working, assemble and adjust the tool without food on the blade. Position it as the manual instructs and secure the food with the intended holder. Stop when the remaining piece is too small to hold. A cut-resistant glove can supplement protection, but does not replace the pusher or permit resting fingers on the edge.
Cleaning and storage
Do not pass a sponge over the blade without following the safe dismantling procedure. Dishwasher permissions may apply to the body rather than the blade. Store attachments protected so nobody finds a loose blade in a drawer.
Cooking tip
Make a test slice first and check that its thickness suits the dish. Carpaccio and gratin need different slices. In related recipes, a mandoline is an option, not a requirement: a properly handled knife also works. Do not try to use the last millimetre of an ingredient at the cost of bringing fingers closer.

Frequently asked questions
Can I use it carefully without a food holder?
We do not recommend it. Use the compatible holder or carriage from the start and stop cutting when it no longer holds the piece securely.
Are all the attachments pictured included?
Not necessarily. Check the exact package contents and distinguish spare parts and optional attachments.
Does a mandoline replace a knife?
No. It is useful for repeated cuts but does not cover every preparation task.
