How to choose
What we would choose for each kitchen
For a pan reserved for eggs, omelettes and other delicate preparations, we would start with BRA Efficient Plus. If you need to finish a dish in the oven, we would consider Monix Mineral for its metal handle and stated compatibility, first confirming the temperature limit. If a visual reference during heating helps, Tefal Unlimited On offers Thermo-Signal. There is no universal winner and we have not tested which lasts longest.
Compare the base, not just the rim diameter
All three references are 24 cm, but that measurement does not describe the flat surface. The two product pages detailing the induction base list different measurements. Check the minimum diameter your hob recognises and how much food you need to spread out. A thick omelette to share and two steaks placed without overlap do not require exactly the same space.
BRA's cast aluminium and Monix's forged aluminium are construction differences. Do not turn thickness into a cooking score: shape, heat source and handling also count. Nor can an advertised abrasion test be converted into guaranteed years of household use.
When I would not choose non-stick
For high-heat searing and making a sauce from browned residue, you may prefer uncoated stainless steel. Non-stick makes sense when it helps release delicate foods. One of each type is often more useful than three similar sizes for the same task.
Care to accept before buying
Avoid prolonged empty heating, sudden temperature changes and abrasive utensils. Do not assume a mineral-look finish is solid stone. PFOA-free does not mean PTFE-free either. Always check instructions for the specific coating, especially if the handle will go in the oven.
Cooking tip
For an omelette, cook vegetables first to evaporate excess moisture, then add the egg over moderate heat. A more expensive pan does not compensate for a watery filling or excessive heat. Related recipes are ideas for use: adapt batch size to your pan.

We would choose it as a pan reserved for eggs and foods that break when turned. The thick base is a construction detail, not evidence that it browns better than the other two. Check that the induction base matches the cooking-zone size your hob supports.

Its practical distinction is the metal handle and the oven compatibility stated by Monix. Before using it in the oven, check the temperature limit in your unit's manual; do not apply the limit from another collection.
Mineral is a commercial range name: the pan is still aluminium with a non-stick coating. Use dry protection for the handle and warn anyone who might pick it up after oven use. We have not measured the finish's scratch resistance.

Frequently asked questions
Is 24 cm suitable for any number of portions?
No. The flat cooking area, the thickness of the preparation and the space needed between ingredients matter. We do not equate diameter with a fixed number of diners.
Does mineral mean uncoated?
No. Monix Mineral is aluminium with a non-stick coating. It should not be confused with the carbon-steel de Buyer MINERAL B.
Is there a winner for durability?
We have not carried out wear tests. The differences described come from official product information and do not establish a particular lifespan.
