Cane molasses
A dark, thick sugar-cane syrup traditionally drizzled over fried aubergine in Andalusia. It is a plant-derived syrup, not bee honey.

Choose
Choose food-grade cane syrup or molasses and check its intensity; very dark blackstrap molasses can be much stronger.
Store
Keep tightly closed away from heat and follow the label after opening. Use a clean spoon.

Drizzle sparingly over freshly fried aubergine, or use measured amounts in dressings and baking.

How to substitute it
A milder dark syrup can work, but changes the flavour. Honey is not a vegan substitute.
