Add with the pan stable, allow it to evaporate and reduce to concentrate the flavour. Cooking does not guarantee that all alcohol is removed.

How to substitute it
For an alcohol-free replacement for amaretto, choose a suitable non-alcoholic liquid and adjust sweetness and aroma. Stock, grape juice or water with a little citrus or vinegar suit different recipes, but will not reproduce its almond flavour.
