Method

  1. Put the water frozen into ice cubes, trimmed pineapple chunks and sugar in the bowl. Blend for 1 minute, gradually increasing from speed 5 to 10. Stop and scrape down with the spatula; blend again briefly if pieces remain.

  2. Add the coconut milk and rum. Mix for 10 seconds at speed 3 and serve immediately in chilled glasses.
