Method

  1. With the bowl dry and cold, grind the sugar and vanilla sugar for 10 seconds at speed 8. Fit the butterfly whisk and add the very cold whipping cream.

  2. Whip at speed 3 without setting a time, watching until soft peaks form. Transfer to a mixing bowl and refrigerate. Remove the butterfly whisk and rinse the bowl.

  3. Peel and halve the pears, then remove the cores. Place the four halves cut-side up in the Varoma and put 10 g dark chocolate in each hollow.

  4. Pour the water into the bowl, fit the covered Varoma and cook for 18 minutes at Varoma temperature, speed 1. Check that the pears are tender, extending cooking if necessary.

  5. Let the pears cool for a few minutes and serve half a pear per person with a spoonful of whipped cream alongside.
