Method

Gently heat the olive oil with the chopped garlic and ginger for 2 minutes without browning. Add 300 ml water and the kombu.

Simmer gently for 5 minutes and remove the seaweed.

Add the katsuobushi, soy sauce and lemon juice, take off the heat and steep for 5 minutes.

Strain the infusion. Mix the cornflour with the remaining 30 ml of cold water, stir into the broth and cook until lightly thickened.

Score a shallow diamond pattern into the skin of the duck breasts without cutting the flesh. Add salt and pepper.

Place skin-side down in a frying pan and cook over medium heat for about 10 minutes to render the fat. Turn and continue until the centre reaches 74°C; timing depends on thickness. Rest for 5 minutes.

Pour off all but a tablespoon of the rendered fat. Sauté the pine nuts, chopped spring garlic and sliced shiitake mushrooms for 5–6 minutes.

Slice the duck and serve with the vegetables and warm sauce. Add the parsley at the end.
