- Breadcrumbs panko-style 100 g
- Extra virgin olive oil preferably sprayed 15 ml
- Lemon freshly squeezed juice 60 ml
- Chicken stock 150 ml
- Honey 45 g

Marinate the chicken breast with 60 ml soy sauce, the ginger and garlic powder for 2 hours in the refrigerator.

Beat the egg with 30 g cornflour. Drain the chicken, coat in the egg mixture and then in the breadcrumbs.

Preheat the air fryer to 200°C for 5 minutes. Spray with the olive oil and cook at 190°C for 12-15 minutes, turning halfway, until it reaches 74°C.

Whisk the remaining 15 g cornflour into the cold chicken stock and pour into a saucepan. Heat over medium heat, stirring.

Add the lemon juice, remaining 15 ml soy sauce and honey. Cook for 3-5 minutes until thickened.

Slice the chicken, spoon over the sauce and serve immediately to preserve the crisp coating.
