Coconut water
The liquid naturally found inside young coconuts, with a mild, slightly sweet flavour. Used in drinks, smoothies and cold preparations.
What it offers and why to use it
Coconut water differs from coconut milk: it contains much less fat and has a watery texture. Its sweetness and mineral content vary with the maturity of the coconut and how the packaged product is processed.

From shopping to cooking
Choose
For packaged coconut water, choose a product with no added sugar and a short ingredient list. The packaging should be intact and within date.
Store
Refrigerate after opening and use within the time stated on the label, usually 2 or 3 days. Water taken from a fresh coconut should be consumed promptly.
Prepare
Use in smoothies, cold drinks, granitas, mild dressings and some light soups or curries.
