Let’s get cooking

Method

  1. Check that the whole sea bream and its dish fit comfortably in the basket. Pat the fish dry and preheat the air fryer to 200°C.

  2. Mix the coarse salt with the 80 ml water until damp and easy to pack. Spread a bed of salt in the dish, set the sea bream on top and cover it completely, leaving only the head exposed.

  3. For this 1 kg sea bream, allow about 25–30 minutes at 200°C. Use a probe to check that the thickest part beside the backbone reaches 63°C without touching the bone; continue cooking if needed. Break away the salt crust, remove the skin carefully and serve the clean fillets.
