Method

  1. Freeze 600 ml beer in ice cube trays for at least 6 hours; keep the remaining 60 ml in the fridge.

  2. Grind the sugar for 20 seconds at speed 10. Add the frozen beer, the 60 ml chilled beer, pasteurised egg white and lemon juice. Blend for 1 minute at speed 8.

  3. Stop the machine, scrape down with the spatula and blend briefly again if needed. Serve immediately in chilled glasses.
