Method

  1. Remove the tough leaves and tips from the artichokes to obtain 600 g trimmed hearts; halve them. Chop the garlic for 5 seconds at speed 5 and scrape down.

  2. Add the olive oil and cook for 7 minutes at Varoma temperature, speed 1, using the splash protection appropriate for your model.

  3. Dissolve the cornflour in the cold beef stock. Add it to the bowl with the white pepper, saffron, beer and salt. Mix for 5 seconds at speed 3.

  4. Add the artichokes and cook for 12 minutes at Varoma temperature, reverse rotation, spoon speed. Add the bacon and cook for another 8 minutes at the same settings.

  5. Check that the artichokes are tender; if needed, extend cooking for a few minutes at the same settings. Transfer to a serving dish and serve with the sauce.
