Method

  1. Chop the spring onion, celery and half the garlic. Soften in a saucepan with 25 g oil and the salt over medium-low heat for 8-10 minutes.

  2. Grate the tomatoes, discarding the skins, and add with all the chopped basil. Cook for 12-15 minutes, stirring, until the tomato has lost some of its moisture.

  3. Cut the green beans into 3 cm lengths, the carrots into thin rounds and the potatoes into 2 cm cubes. Add everything with the water. Partly cover and simmer gently for 20-25 minutes until the potato is tender.

  4. Slice the remaining garlic and gently colour it in a frying pan with the remaining 15 g oil. Add the ham and sauté for a minute. Divide the stew between four bowls, spoon over the entire garlic and ham mixture and finish with all the parsley.
