Let’s get cooking

Method

  1. Soak the beans in water for 12 hours and drain. Trim the leek, wash between its layers and chop.

  2. Put the pig ear, leek and rosemary in a pressure cooker. Cover with water, add some salt and close. Cook for 30 minutes from reaching pressure. Turn off and allow pressure to drop completely before opening, about 15 minutes.

  3. Remove the pig ear and strain the stock. Return both to the cooker and add drained beans. Adjust water without exceeding the pulse filling mark. Close and cook for 15 minutes from pressure; allow pressure to drop completely before opening, about 15 minutes.

  4. Remove the ear and reserve the stock. Dice the courgette and cook in a saucepan with 30 ml oil for eight minutes. Add tomato sauce, beans and about 200 ml reserved stock. Cook for eight minutes.

  5. Cut the pig ear into pieces and pat dry. Sauté in the other 30 ml oil until browned, about five minutes.

  6. Serve the beans in four bowls topped with pork ear and chopped parsley.
