Let’s get cooking

Method

  1. Cover the beans with water and soak for 12 hours. Drain and rinse.

  2. Chop the spring onion and cook in the oil in a pressure cooker for eight minutes. Grate and add the tomato; cook for five minutes.

  3. Add beans, ham in four pieces and water to cover by about three centimetres, without exceeding the pulse limit. Close and cook for ten to 15 minutes from pressure. Turn off and allow pressure to drop completely before opening, about 15 minutes.

  4. Check the beans are almost tender; otherwise cook a little longer before adding rice. Peel and cut pumpkin into one-centimetre cubes.

  5. Add rice and pumpkin and simmer uncovered for 16 to 18 minutes until the rice is tender. Add hot water as needed to keep the stew brothy.

  6. Taste before adding salt as the ham seasons the stock. Divide between four bowls and add chopped parsley.
