- Salt cooking water 3 g

Wash the cauliflower florets and boil in the 1800 g water with the salt for 7-9 minutes until just becoming tender. Reserve 350 g cooking water, drain the cauliflower and discard the rest of the water.

Heat the oil in a frying pan over medium-low heat. Add the sliced garlic, almonds and bread and stir for 3-4 minutes until lightly golden, without burning the garlic. Transfer everything, including the oil, to a blender jug.

Crush the saffron threads and add to the jug with the reserved 350 g water. Blend to a sauce. Return the cauliflower to the saucepan, pour over the sauce and simmer gently for 5 minutes, shaking the pan rather than breaking the florets.

Check that the cauliflower is tender and the sauce has thickened. Divide everything between four plates and sprinkle with the parsley. Serve hot.
