Let’s get cooking

Method

  1. Dissolve the fresh yeast in the water. Add 500 g flour and mix, then add the salt last.

  2. Knead for 10 minutes, oil a bowl with the olive oil and leave the covered dough to rise for 2–3 hours.

  3. Use the remaining 20 g flour to shape a loaf. Cover and prove for another 35–45 minutes until puffy.

  4. Meanwhile, preheat the oven with the baking tray inside. Score twice just before transferring to the hot tray using a peel or baking paper rated for that temperature.

  5. To create steam, place an ovenproof metal container of hot water on a lower rack, following the oven manufacturer’s guidance; do not pour water onto the oven floor or glass.

  6. Bake for 10 minutes at 250°C, carefully remove the water container using heat protection, reduce to 210°C and bake for another 40 minutes. Cool on a rack.
