Method

  1. Chop the black olives for 3 seconds at speed 4 and set aside. Put the water, 50 g olive oil and sugar in the bowl; heat for 1 minute at 37°C, speed 2. Add the fresh yeast and mix for 15 seconds at speed 4.

  2. Add the strong bread flour and mix for 15 seconds at speed 6. Add the olives, thyme and salt. Knead for 2 minutes on dough mode and finish shaping the dough in a bowl.

  3. Grease a 25–30 cm loaf tin with the remaining 5 g olive oil. Add the dough, cover and leave to rise for about 1 hour until doubled. Bake at 180°C for 30 minutes and cool on a wire rack before slicing.
