- Serrano ham diced 200 g
- Onion 220 g
- Leek 240 g
- White wine 50 ml 50 g
- Chicken stock 500 ml 500 g
- Garlic 6 g
- Extra virgin olive oil 25 g sauce and 10 g sautéing 35 g
- Parsley 3 g
- Black pepper to taste 0.3 g
- Salt to taste 1 g

Chop the onion and trimmed leeks. Soften in 25 g oil over low heat for 15 minutes. Add the white wine and boil for 2 minutes. Pour in the chicken stock and cook for 10 minutes until the sauce reduces slightly.

Cook the pasta shells in plenty of water according to the packet. Drain without rinsing.

Slice the garlic and lightly brown in the remaining 10 g oil. Add the ham, sauté for 30 seconds, then add the pasta. Transfer everything to the sauce and cook for one minute, tossing.

Season with pepper, taste before adding salt and serve with chopped parsley.
