Method
-
Preheat the oven to 200 °C using conventional top and bottom heat. Wash and halve the baby potatoes so the pieces are no thicker than about 2 cm. Clean and quarter the mushrooms. Finely chop the fresh onion. Cut the chicken breast into roughly 3 cm cubes.
-
Mix the minced garlic, ground black pepper, garlic powder and sweet paprika in a bowl. Add the lemon juice, honey, mustard, soy sauce, extra virgin olive oil, pinch of salt and Pedro Ximénez wine. Stir until the dressing is combined.
-
Put the chicken, potatoes, mushrooms and onion in a large ovenproof casserole or baking dish. Pour over the dressing and toss until everything is coated. Spread without piling the ingredients too deeply so the potatoes cook evenly.
-
Bake on the middle shelf for 50–60 minutes. After 25–30 minutes, carefully stir to turn the pieces and redistribute the sauce. If the bottom starts to dry out, pour 50–80 ml hot water down one side; do not add it if there is already enough sauce.
-
Check that the potatoes are tender when pierced and that the centre of the thickest chicken pieces reaches 74 °C, measured with a food thermometer. Remove from the oven and serve with the hot sauce divided between four servings.
