Let’s get cooking

Method

  1. Dry the squid thoroughly. Mix the flour with the salt, toss the rings in it and shake off the excess in a sieve: aim for a thin dusting, not clumps of flour.

  2. Preheat the empty air fryer for 5 minutes at 190°C. Spread the rings without overlapping and mist or very gently brush with 6 g of the olive oil.

  3. Cook for 5 minutes at 190°C. Turn the rings, apply the remaining 6 g of oil and cook for another 3–5 minutes. They should be cooked and opaque inside, with a dry coating; do not overcook just to achieve the colour of deep-frying.

  4. Serve immediately with the lemon wedges to squeeze over to taste. If the basket cannot hold everything in one layer, cook a second batch and add 8–10 minutes to the stated time.
