Method

  1. Simmer the hake bones and skin in the water with some parsley and salt for 15–20 minutes. Skim and strain.

  2. Soften strips of onion and green peppers in 30 ml oil. Add half-centimetre potato slices and cook covered for 20 minutes until almost tender.

  3. Preheat the oven to 220°C. Place in a baking dish, add 150 ml stock and bake at 220°C for 10 minutes.

  4. Season four hake portions with salt and pepper, place on the potatoes and add another 150 ml stock. Bake for about 8 minutes until cooked.

  5. Cook the piquillo peppers with 15 ml oil, sugar and salt for 10 minutes.

  6. Colour sliced garlic and chilli in the remaining oil. Remove from the heat and add vinegar and parsley. Spoon over the hake and serve with the piquillo peppers and potatoes.
