Method
-
Shell the prawns and reserve the clean tails. Brown the heads and shells in 10 ml oil; add one onion, the leek, carrot and half the garlic.
-
Cover with the water and simmer for 18 minutes.
-
Strain into another container, pressing gently: keep the strained stock for the stew and discard the solids.
-
Cut the cod into 2 cm cubes and check for bones. Dust lightly with flour, brown in 20 ml oil and remove to a plate.
-
In the same pan, sauté the prawn tails for 45 seconds and remove them too. They will finish cooking in the stew.
-
Sauté the remaining chopped onion in 20 ml oil for 8 minutes. Add the remaining half of the chopped garlic and cook for one minute.
-
Add the tomato, chickpeas and 500 ml of the strained stock. Add the 4 g salt, adjusted to the saltiness of the cod, and simmer for 8 minutes.
-
Add the reserved cod and prawns. Cook for 3–4 minutes until the cod reaches 63°C in the centre and the prawns are opaque. Finish with chopped parsley.
