Method

  1. Put the sugar, whole milk and cream into a roomy heavy-bottomed saucepan. Stir to combine.

  2. If using the vanilla pod, split it lengthways, scrape out the seeds and add them to the mixture. Heat while stirring with a spatula.

  3. As soon as it boils, add the bicarbonate of soda gradually: the mixture may foam. Reduce the heat to its lowest setting.

  4. Cook uncovered for 90–120 minutes, stirring often and continuously as it thickens. Scrape the base and sides until caramel-coloured and creamy.

  5. Remove from the heat when a small cooled sample is spreadable. Transfer to clean heatproof containers, allow to cool and keep covered in the fridge.
