Method
-
Drain and rinse the 500 g cooked chickpeas. Chop the 150 g onion, grate the 5 g garlic and cut the 200 g boneless skinless chicken thigh into roughly 2 cm pieces. Keep raw chicken separate from the other ingredients.
-
Cook the 100 g bacon in a wide frying pan over medium heat for about 5 minutes until crisp. Transfer to a plate and reserve one quarter for serving. Leave a thin film of fat in the pan.
-
Add the 10 ml extra virgin olive oil and the onion to the same pan. Cook for about 8 minutes, stirring, until soft and lightly golden. Add the garlic and cook for 1 minute without burning.
-
Add the chicken thigh and season with some of the 1 g salt and the 0.3 g black pepper. Fry for about 5 minutes, stirring to brown the outside; it will finish cooking in the sauce.
-
Add the chickpeas and three quarters of the bacon. Stir for 1 minute to combine with the onion mixture.
-
Pour in the 200 ml cooking cream (18% fat) and the 150 ml chicken stock. Add the 50 g grated Parmesan cheese and stir. Simmer over medium-low heat for about 10 minutes, stirring, until the sauce thickens and the chicken is fully cooked in the centre.
-
Taste and add the remaining salt only if needed. Divide between four plates and top with the reserved crispy bacon.
