Method

  1. Cut the green beans into 3 cm pieces. Boil in the 2000 g salted water for 7-9 minutes until tender but firm. Reserve 180 g water, drain the beans and discard the rest.

  2. Toast the 25 g flaked almonds in a dry frying pan for 1-2 minutes and reserve. Chop the spring onion and garlic; soften in 20 g oil over low heat for 7 minutes.

  3. Add the 50 g ground almonds, all the cream and reserved 180 g water. Cook gently for 8 minutes, stirring, then blend until smooth.

  4. Toss the thoroughly drained beans in the remaining 15 g oil for 2 minutes. Divide between four plates, cover with all the sauce and finish with the flaked almonds and all the parsley.
