- Extra virgin olive oil 20 g ribs and 20 g potatoes 40 g

- Fresh thyme 2 g
- Parsley 3 g
- Black pepper 0.4 g
- Salt to taste 3 g

Preheat the oven to 170°C. Mix the mandarin juice with the honey, mustard and 20 g oil. Season the ribs with salt and pepper and coat both sides.

Place the ribs in a roasting dish, add all the marinade and cover tightly with baking paper and foil outside, keeping the foil away from the marinade. Roast for 1½–2 hours until tender. Uncover and brown at 200°C for 8–10 minutes, watching the honey. Rest for 5 minutes.

While the ribs roast, boil the potatoes in water for 25–30 minutes until easily pierced with a knife. Drain and quarter. Heat the remaining 20 g oil in a frying pan and brown the potatoes for 6 minutes.

Add chopped garlic, oregano and thyme leaves to the potatoes; sauté for 2 minutes without burning the garlic. Serve the ribs with their juices and potatoes, then scatter with parsley.
