Method

  1. Blend the watermelon and put in a saucepan with the soy sauce and sugar. Simmer uncovered for 20–25 minutes until reduced to about 250 g of fluid dressing, not a caramel. Cool slightly and whisk in the oil.

  2. Boil the water with the salt. Cook the pasta for the time on its packet until al dente. Drain, briefly rinse under running water and drain thoroughly again.

  3. Cut the cucumber into quarter-moons and dice the tomato. Combine with the pasta, flaked tuna and halved olives.

  4. Toss with three-quarters of the dressing. Divide between four plates, spoon over the rest and finish with chopped chives and parsley.
