Method
-
Chop chives and basil and mix with butter in a bowl. Put on food wrap, shape into a log and refrigerate for 30 minutes until firm.
-
Wash and prick the potatoes. Put in a microwave-safe container with a vented lid and cook at 800 W for twelve to 20 minutes depending on size, turning halfway. Check they are tender.
-
Open the eight pork steaks and season with some salt and black pepper. Place a ham strip and folded cheese slice in each. Close and press the edges.
-
Beat eggs in a bowl and put breadcrumbs in another. Dip the pockets in egg and breadcrumbs and press to stick the coating.
-
Heat plenty of oil with the crushed garlic. Fry pockets in batches over medium heat for about four to five minutes per side depending on thickness until golden and fully cooked inside. Drain on absorbent kitchen paper.
-
Split the potatoes and divide the herb butter between them. Serve one potato and two pockets per person with parsley.
