Pat the hake dry and check for bones. Brush the fillets with 5 g of the olive oil and sprinkle with the salt. Reserve 1 g of oil for the basket.

Preheat the empty air fryer for 5 minutes at 190°C. Taking care not to burn yourself, lightly oil the contact area with the reserved oil and arrange the fillets apart, skin-side down if they have skin.

Cook for 8–10 minutes at 190°C without turning. Check the centre of the thickest fillet: it should reach 63°C and separate into opaque flakes. If needed, continue in 1-minute intervals.

Lift out with a wide spatula to avoid breaking the fish and serve immediately on two plates.
