Method

  1. Open the squid rings, cut them into thin strips and dry very thoroughly.

  2. Mix the milk and cold water with the flour, baking powder and salt to make a smooth batter.

  3. Heat the olive oil to 180°C. Dip each strip of squid in the batter and fry in small batches without crowding the pan.

  4. When golden, drain the squid on a rack or kitchen paper and serve immediately.
