Method

  1. Chop the onion and garlic for 5 seconds at speed 4. Add the olive oil and crushed tomatoes and cook for 10 minutes at 100°C, speed 1.

  2. Add the flour and cook for 1 minute at 100°C, speed 2. Add the cleaned squid rings, white wine, squid ink, bay leaf, salt and pepper.

  3. Cook for 20 minutes at 100°C, reverse rotation, spoon speed. Check that the squid is tender and cook for another 5–10 minutes if needed. Remove the bay leaf and serve in bowls.
