Method

  1. Peel the prawns. Put the heads and shells in the bowl with 50 g olive oil; cook for 5 minutes at 100°C, speed 1. Add the water and place the cleaned shell-on mussels in the Varoma. Cook for 8 minutes at Varoma temperature, speed 1, or until open. Discard closed mussels, remove the meat and strain the stock.

  2. Wash the bowl. Chop the onion, garlic and tomato for 5 seconds at speed 4. Add the remaining 100 g olive oil and chopped squid. Cook for 10 minutes at 100°C, reverse rotation, spoon speed.

  3. Add the sweet paprika, salt and rice. Cook for 2 minutes at 100°C, reverse rotation, spoon speed. Pour in the beer and stock, topping the stock up to 600 ml with water if reduced. Cook for 13 minutes at 100°C, reverse rotation, spoon speed.

  4. Add the peeled prawns for the final 3 minutes and check they are cooked through. Combine the mussel meat and finished rice in a serving bowl and rest for 2 minutes.
