Method

  1. Preheat the oven to 230°C. Dry the vegetables well so they brown rather than steam.

  2. Spread the courgette, mushrooms and peppers over a large tray. Toss with the garlic, extra virgin olive oil, pepper and half the salt.

  3. Roast for 30 minutes, stirring halfway through. The vegetables should be golden but retain some texture.

  4. Mix the yoghurt with the mustard, soy sauce, parsley and remaining salt. Taste before adding more, as soy sauce is already salty.

  5. Let the vegetables cool slightly for 5 minutes. Serve with the yoghurt dressing spooned over or alongside.
