Method
-
Prepare three 350–400 ml mini cocottes or ceramic dishes suitable for oven and air-fryer use that fit together in the basket without blocking airflow. Peel and core the apples to obtain 600 g prepared apple. Slice 1–2 mm thick with a sharp knife or a mandoline using its hand guard. Toss with the 30 ml lemon juice.
-
Mix 80 g of the sugar with the 10 g cornflour and 4 g ground cinnamon in a bowl until evenly combined.
-
Put the remaining 100 g sugar and 30 ml water in a saucepan. Heat over medium heat for about 6–8 minutes, without stirring with a spoon once boiling, until amber caramel forms. Remove from the heat and immediately divide between the three dishes, coating the bases. Use protection to handle the dishes and do not touch the hot caramel.
-
Divide the apple slices between the dishes, alternating fruit layers with the sugar, cornflour and cinnamon mixture. Press each layer gently to compact it and leave at least 1 cm space below the rim.
-
Preheat the air fryer to 180 °C following your model instructions. Place the three uncovered dishes in a single batch, leaving space between them. Cook for 22–25 minutes, until a skewer passes through the apple layers without resistance.
-
Carefully remove the dishes using protection and leave to cool for about 15 minutes until safe to handle. Run a small knife around the inside edge, cover each dish with a plate and carefully turn over so the caramel is on top. Lift off the mould and serve one apple stack per person with its own caramel.
