Soak the cashews in separate water for 8 hours in the fridge, drain and rinse. Blend with coconut milk, pitted dates, 4 ml vanilla and 1 g salt into a cream.

Mix diced pears, blackberries, cardamom, 2 ml vanilla, lemon juice and 25 g sugar. Transfer to a dish and add chopped chocolate.

Mix oats, ground almonds, sunflower seeds, remaining salt and vanilla and 105 g sugar. Rub in diced cold coconut oil into crumbs.

Preheat the oven to 180°C. Scatter over the fruit and bake at 180°C for 35–40 minutes. Serve with cashew cream.
