Let’s get cooking

Method

  1. Mince the chicken breast to an even texture. Plan for 4 air-fryer batches; the stated total is an estimate for that schedule. If your basket needs more batches, allow extra time and do not stack the food.

  2. Mix the chicken with the salt, garlic powder, onion powder, sweet paprika, breadcrumbs and mozzarella.

  3. Press the mixture between two sheets of baking paper to a 2 cm thickness. Mark out 20 sticks and chill in the freezer for 20 minutes, just until firm. Separate the sticks and remove both sheets completely before cooking.

  4. Preheat the air fryer to 200°C for 5 minutes. Spray the olive oil over both sides and cook at 195°C for 12-15 minutes, turning after 8 minutes.

  5. Check that the centre reaches 74°C before serving.
