Method

Chop the garlic. Leave two cayenne chillies whole and chop the other two. Heat the olive oil and gently fry the garlic and chillies for 1–2 minutes without over-browning.

Add the chopped tinned tomatoes and salt. Simmer uncovered for 18–20 minutes, stirring occasionally.

Remove the whole chillies and stir the chopped parsley into the sauce before serving.
