Wash the tomatoes and score a shallow cross in their bases. Peel and cut the onion, garlic, leek and carrot, keeping the carrot pieces slightly thinner so everything cooks evenly.

Place all the vegetables in a dish that fits the basket and add the olive oil. Preheat the air fryer to 170°C for 5 minutes.

Roast at 165°C for 28-32 minutes. Remove the tomatoes when very soft, and leave the onion, garlic, leek and carrot for another 8-12 minutes if they are still firm.

Peel the tomatoes and blend the flesh with the remaining vegetables, oregano, salt and black pepper. Gradually add only enough water to reach a smooth sauce consistency.

Transfer the sauce to a saucepan and simmer gently for 8-10 minutes to blend the flavours and adjust the thickness. Cool promptly if not using immediately.
