Method

  1. Preheat the oven to 200°C, conventional heat. Line a large tray with baking paper.

  2. Toss the sweet potato with half the extra virgin olive oil, salt, pepper and rosemary. Roast for 15 minutes.

  3. Add the broccoli, coat with some of the remaining oil and roast for another 5 minutes.

  4. Pat the salmon dry, season with salt and pepper and place between the vegetables. Add the garlic, lemon juice, lemon slices and remaining oil.

  5. Bake together for 10–12 minutes, until the salmon flakes easily but remains moist.

  6. Rest for 2 minutes and serve with the roasted lemon slices.
