Slice the courgette lengthways into 16 long 2 mm ribbons with a mandoline, using the hand guard. Season with the salt and black pepper, then blot away moisture after 5 minutes.

For each parcel, cross four ribbons, alternating their direction. Place one portion of cooked ham and Emmental cheese in the centre and fold the ends inwards to make a sealed parcel.

Coat each parcel first in the flour, then beaten egg and finally breadcrumbs. Press gently so the coating adheres.

Preheat the air fryer to 200°C for 5 minutes. Place the parcels seam-side down, spray with the olive oil and cook at 180°C for 10-12 minutes, turning halfway.

Check that the coating is golden and the cheese melted. Rest for 2 minutes before cutting so the filling does not spill out.
