Let’s get cooking

Method

  1. Rinse the clams, discarding broken shells and any that do not close when tapped. Shell the prawns. Brown heads and shells in 15 ml oil; add the chopped onion, carrot, leek and celery, followed by the tomato and cook for 5 minutes.

  2. Add water and the hake head and bones. Simmer gently for 20 minutes, skimming, then strain.

  3. Sauté the prawn tails in the remaining 20 ml oil with garlic and parsley for 1 minute. Steam the clams separately, covered, with a little water for 3–5 minutes. Discard any that remain closed and strain their liquor into the stock.

  4. Measure 1.2 litres stock, season with the stated salt allowing for the clam liquor and bring to the boil. Refrigerate or freeze the remaining stock for another dish. Cook the noodles according to the packet and add the seafood for the final 2 minutes until the prawns are opaque and cooked through.
