Method

  1. Peel the prawns. Put the heads and shells in the bowl with 500 ml water and cook for 5 minutes at 100°C, speed 2. Strain through a fine sieve and wash the bowl thoroughly.

  2. Chop the tomatoes, green pepper, onion and garlic for 5 seconds at speed 4. Add the olive oil and cook for 10 minutes at 100°C, speed 1.

  3. Add the diced potato, strained stock, remaining 500 ml water, saffron and salt. Cook for 10 minutes at Varoma temperature, reverse rotation, spoon speed. Check the clams and discard any broken ones or open ones that do not close when tapped.

  4. Add the thick noodles and place the clams in the Varoma. Cook for the noodle packet time, about 8 minutes, at Varoma temperature, reverse rotation, spoon speed. Add the peeled prawns for the final 3 minutes and check they are opaque and cooked through. Serve with the open clams; discard closed ones.
