Method

  1. Mix the flour, yeast and water; add oil and salt and knead for 8 minutes. Cover and prove for 60–75 minutes.

  2. Heat the oven to 250°C with a tray inside. Stretch the dough to 30 cm, leaving a slightly thicker rim.

  3. Spread with tomato and mozzarella. Arrange tuna, ham, mushrooms and capers in four sections and add oregano.

  4. Bake on the hot tray for 9–12 minutes until the base and rim are golden.
