- Egg 1 without shell 50 g

- Green pepper 100 g
- Carrot 100 g
- Soy sauce 25 g
- Extra virgin olive oil 5 g omelette and 25 g stir-fry 30 g
- Chives 3 g
- Parsley 2 g
- Salt only if needed 1 g

Boil the peas for 8–12 minutes until tender, then drain. In another pan, cook the noodles according to the packet, drain and reserve 100 ml cooking water.

Beat the egg. Heat 5 g oil in a frying pan, add the egg and cook a thin omelette on both sides until no liquid remains. Remove and dice it; dice the cooked ham as well.

Finely dice the spring onion, green pepper and carrot. Stir-fry in a large frying pan with the remaining 25 g oil for 6–8 minutes. Add the prawns and cook for 2–3 minutes until opaque and firm.

Add the noodles, peas and soy sauce. Stir-fry for 1–2 minutes, adding a splash of reserved water if they stick. Fold in the ham and omelette, heat for one minute and taste before adding salt. Serve with chopped chives and parsley.
