Method

Heat the oven to 210°C, or 190°C fan, and line a baking tray with baking paper. Mix the milk and lemon juice in a jug and set aside while preparing the dry ingredients.

Sift the 450 g dough flour, baking powder and salt into a mixing bowl. Stir in the sugar.

Rub the chilled butter into the flour with your fingertips until the mixture resembles fine crumbs. Stir in the sultana raisins.

Make a well in the centre, pour in the lemon-milk mixture and bring together with a round-bladed knife or spatula. Stop as soon as a rough dough holds together.

Dust the work surface with some of the remaining 10 g flour. Flatten the dough by hand, fold once, then pat out to about 2.5 cm thick.

Cut rounds with a floured 6 cm cutter, pressing straight down without twisting. Gently gather the trimmings to make about 12 scones.

Arrange the scones on the tray with space between them. Beat the egg and brush only the tops.

Bake for about 17 minutes, until risen and golden.

Transfer to a wire rack and cool for about 15 minutes before serving.
