Method

  1. Purge the razor clams in cold salted water for 30 minutes, then rinse.

  2. Emulsify pasteurised egg and oil; fold in the chopped pickles and capers, spring onion, mustard, lime and parsley.

  3. Griddle the clams over very high heat for 45–60 seconds per side and serve with the sauce.
