Method

  1. Wash and dry the mandarins thoroughly; cut them up with their peel and remove the seeds. Put in the bowl with the eggs, sugar and vanilla extract. Mix for 1 minute at 50°C, speed 4.

  2. Add the sunflower oil and mix for 10 seconds at speed 4. Add the flour and baking powder; mix for 10 seconds at speed 4 and finish combining with the spatula.

  3. Pour into a lined 22 cm cake tin. Bake at 180°C for about 30 minutes, until a skewer comes out clean. Rest for 10 minutes, remove from the tin and cool on a wire rack.
