Method

  1. Peel the prawns and reserve the flesh. Put the heads and shells in the bowl with the brandy and 200 ml water. Cook for 5 minutes at 100°C, speed 2. Strain and wash the bowl.

  2. Chop the leeks and onion for 5 seconds at speed 5. Add the olive oil and butter and cook for 7 minutes at 100°C, speed 1. Add the chopped courgette, remaining 200 ml water, salt and pepper; cook for 12 minutes at 100°C, speed 1.

  3. Let cool to 60°C and blend for 30 seconds, increasing from speed 4 to 8. Add the strained stock and cream and heat for 5 minutes at 100°C, speed 2. Add the prawns and cook for 3 minutes at 100°C, reverse rotation, spoon speed until opaque and cooked through.
