Method

  1. Chop the onions, green peppers and 12 g garlic. Soften in the open pressure cooker with 30 g oil for 12 minutes. Add the paprika, stir briefly and immediately add the tomato sauce and dried-pepper pulp.

  2. Add the litre of water and deglaze the base. Add the trotters and a pinch of salt, respecting the manufacturer’s maximum fill and minimum liquid levels. Cook for 50–60 minutes from reaching pressure and release naturally. They should be very tender; cook for another 10 minutes if needed.

  3. Preheat the oven to 200°C. Carefully lift out the trotters and place skin-side up in a metal roasting dish. Roast for 20–25 minutes to brown. Meanwhile, skim fat from the cooking liquid, blend the sauce and reduce uncovered for 20–25 minutes, stirring.

  4. Cut the potatoes into 1 cm cubes and cook in a frying pan with the remaining 30 g oil over medium heat for 20–25 minutes, turning until tender. Add the remaining 3 g finely chopped garlic for the final 2 minutes. Season and mix with half the parsley.

  5. Serve two trotter halves per person with the sauce, potatoes and remaining parsley. Make clear that they contain small bones and remove them carefully while eating.
